Soy yogurt sometimes called soygurt or yofu is not real yogurt. It is a non dairy product. It isn’t made from cow milk, but from soy milk. The soy yogurt has the same way at making like regular yogurt.

Soy yogurt is produced by fermenting soymilk. Like conventional yogurt from cow milk, it uses friendly bacteria, Lactobacillus bulgaricus and Streptococcus thermophilus.

Different from cow milk yogurt, soy milk does not contain lactose but other sugar like raffinose and stachyose. Soy yogurt usually contains natural probiotics. Two soy sugar, raffinose and stachyose work as probiotics and stimulate the lactic acid bacteria.

Making soy yogurt at home is simple and easy. Just buy your yogurt and soy milk. Combine and mix them in a large bowl. Ensure the yogurt and soy milk is combined well. Therefore place the mixture in a warm place for more than 5 hours in order to make the yogurt set and thick.

You should check the label on package carefully to make sure that the yogurt starter  has active and live cultures if you buy the yogurt starter. We know active culture as friendly bacteria. The function of this friendly bacteria is to make the yogurt thicken and tasty. Your soy milk can’t turn into soy yogurt if the starter-yogurt you buy doesn’t have active and live cultures.

You should not use hot soy milk because it can kill the friendly bacteria on the culture. You need to make it warm first. The bacteria will be more friendly with the warm soy milk. You must be sure that your appliance  such as your bowls, spoons or jars must be clean and free from any competing bacteria before you starting cook your soy yogurt. Your cooking area must be also clean. A simple way to sterilize your appliance is by washing them in boiling water for a moment.
